Ingredient Notes & Substitutions

Ground beef: You can swap this for ground turkey or chicken depending on what you have.

Bacon: Adds smoky flavor—feel free to use turkey bacon if you prefer.

Spinach: I used frozen spinach (thawed and drained), but sometimes we use frozen broccoli.

Cheese: We used shredded cheddar, but mozzarella, Colby Jack, or a blend would work just as well.

How to store

Let the quiche cool completely, then cover it with foil or transfer to an airtight container. It will keep in the refrigerator for up to 4 days. To reheat, warm individual slices in the microwave or place the whole quiche in a 325°F oven until heated through.

Can I freeze it?

Yes! This quiche freezes beautifully. After baking, let it cool completely, then wrap it tightly in plastic wrap and foil, or place it in a freezer-safe container. It will keep for up to 2 months. When you’re ready to enjoy it, thaw overnight in the fridge and reheat in a 350°F oven until warmed through.

Cheesy Bacon & Beef Quiche

Course: Main Course

Ingredients
  

  • 2 Premade pie crusts
  • 1 lbs. Ground beef
  • 4 tbs Worcestershire sauce
  • 8 slices Cooked bacon, crumbled
  • 1/2 Red onion optional
  • 1 cup Frozen spinach thawed use a paper towel to soak out as much liquid as possible after thawing
  • 2 cups Shredded cheddar or Colby Jack cheese divided
  • 12 Eggs
  • Salt & Pepper

Method
 

  1. Preheat the oven to 375°F. Lightly grease two 9-inch glass pie dishes and press in the thawed pie crusts.
  2. Cook the beef in a skillet over medium heat. Once browned, drain if needed and stir in Worcestershire sauce. Set aside.
  3. Sauté the onion until soft and slightly golden.
  4. Divide the fillings in half and layer into each pie crust in this order:
    Crumbled bacon
    Seasoned ground beef
    Sautéed onion
    Thawed spinach (squeeze out as much water as you can!)
    Shredded cheese
  5. In a medium bowl, whisk together 6 eggs with a pinch of salt and pepper. Pour over the first quiche. Repeat with the remaining 6 eggs for the second quiche.
  6. Bake both quiches for 45–50 minutes, or until the centers are set and the tops are lightly golden.
  7. Let cool for 10 minutes before slicing and serving.

Notes

  • These quiches reheat beautifully and are great for breakfast, lunch, or dinner.
  • Not a spinach fan? You can leave it out and still have a great bacon cheeseburger flavor. Or replace it with frozen broccoli using the same steps.
  • Want to make it ahead? Assemble the quiches and refrigerate before baking.
