Easy Pesto Chicken in the Crockpot – No Prep Needed!

This easy slow cooker meal has become one of our favorite low-effort dinners — especially when I’m balancing homeschool, housework, and everything in between. With just a few simple ingredients and minimal prep, you can serve a warm, comforting meal without standing over the stove.

Crockpot meals in general are one of my favorites because I’m more of a morning person. As much as I love cooking sometimes it’s nice to have something mostly already done by dinner time.

I used homemade frozen pesto this time (from our summer basil harvest!), but store-bought works just as well — and I’ll give you a few options below so you can make it your own.

Ingredients layered inside a crockpot before cooking — chicken breasts, cherry tomatoes, cream cheese, and pesto — with a slow cooker liner for easy cleanup.

I love how simple this meal is — just a few cozy ingredients, tossed in and ready to slow cook into something creamy and comforting. I always use a crockpot liner to make cleanup easier, and it works perfectly for recipes like this where cheese and sauce can stick. Less scrubbing, more relaxing.

We love this over a big bowl of pasta, but it’s also delicious with roasted potatoes or even rice. If you’re looking for a low-carb option, serve it with zucchini noodles or steamed veggies. You can also serve it on toasted sandwich rolls for a creamy pesto chicken melt!

Crockpot Creamy Pesto Chicken with Tomatoes

Ingredients
  

  • 2 Chicken Breast
  • 12 oz Pesto store bought or homemade
  • 8 oz Cream cheese
  • 8-10 oz Cherry or grape tomatoes cut in half
  • To taste Salt & Pepper

Method
 

  1. Add ingredients to crockpot starting with chicken then pesto, cream cheese, tomatoes, salt and pepper.
  2. Set crockpot to low for 8 hours
  3. Shred chicken
  4. Serve over pasta or with roasted potatoes and veggies

Tips

  • Picky eaters? You can stir in extra cream cheese or a splash of milk to mellow out the pesto.
  • Want a veggie boost? Toss in spinach or zucchini in the last hour of cooking.
  • Great for leftovers: This reheats beautifully for lunch the next day!
